Easy Egg Salad

One of my favorite things to keep around in my refrigerator are hard boiled eggs. Sometimes I will buy two cartons of eggs and hard boil a whole carton. They are great for a quick snack, a quick meal, topping on a salad or you can take a few and make some egg salad for a sandwich or with crackers. Check out this easy and delicious Egg Salad recipe and make it the next time you need something different for your lunch!

Easy Egg Salad
- serves around 4-6 sandwiches

- 8 eggs
- 1 tsp. mustard
- 1/2 cup of mayonnaise
- 1/4 cup of chopped green pepper
- 1/2 tsp. Paprika
salt and pepper to taste

Place eggs in saucepan and cover with cold water.

Bring water to a boil and remove from heat and let eggs sit covered for at least 15 minutes. Run cold water over them to peel them and chop them up. In a bowl stir together the mustard, mayonnaise, green pepper, and paprika.

Add in the eggs and salt and pepper to taste, stir and serve on bread or crackers.
